Reviews of other sites say cuts don't go all the way through, so many pieces have their backs "stuck together" - how do you avoid this?

Hi , i want to get my own custom puzzle , i want it as a present for my father and he is really into his puzzles so it does need to be alot of pieces and very difficult, are these puzzles just about the novelty of choosing your own photo or can them be made challenging aswel?
